Easy Peasy Banana Pancake
Gluten free, dairy free
Pancakes don’t get any easier than this! The base recipe is great on its own but feel free to experiment with add-ins/toppings. Enjoy as breakfast or snack - and they’re a great source of protein!
Serves 1
Ingredients
- 1 ripe banana 
- 2 eggs 
- cinnamon to taste 
Optional add-ins:
- a few walnuts 
- 1 Tbsp of ground flaxseed or 1 Tbsp of raw almond butter 
Optional toppings:
- smash up a few berries- frozen or fresh- to spread on top 
- dollop of coconut yogurt (or Greek yogurt) 
- drizzle of maple syrup or honey 
- shredded coconut, cacao nibs 
Instructions
- Mash banana in a medium bowl. Whisk in eggs and cinnamon to create your pancake batter. Combine extra “add-ins” if using. 
- Grease a small skillet with coconut oil. Pour mixture onto the skillet (on medium heat). Cook until the right side up has small bubbles escaping. Flip and finish cooking until both sides are golden brown. 
- Serve on a plate with any desired toppings.
