Blueberry Banana Overnight Oats
Dairy Free. Gluten Free Option
The perfect fast and easy breakfast to make the healthiest start to your day - the ‘cooking’ is done in the fridge overnight, just grab and go in the morning!
Serves 1
Ingredients
- 1 large very ripe banana 
- 1 tablespoons chia seeds 
- 1/4 teaspoon cinnamon 
- 1/2 cup gluten-free rolled oats 
- 3/4 cup almond milk 
- 1/4 teaspoon pure vanilla extract 
- (optional: 1 tsp maca powder, 1 heaping Tbsp protein powder) 
Suggested Toppings:
- Fresh or Frozen Blueberries (or other desired fruit) 
- Coconut flakes 
- 1 Tbsp Gogi Berries 
- Chopped Cashews or walnuts 
- Scoop of coconut yogurt 
Directions
- In a small bowl, mash the banana until smooth. Add the chia seeds and cinnamon stir until combined. 
- Mix in the oats, almond milk, and vanilla. Cover and refrigerate overnight, or a minimum of 2 hours. 
- In the morning, stir the oat mixture to combine. If the consistency is still too runny you can add an additional 1 tablespoon chia seeds and place back in the fridge until it has thickened up. If the oat mixture is too thick, add a splash of milk and stir to combine.
