Oatmeal Apple Cinnamon Cookies
Dairy Free. Gluten Free. Vegan
These soft & delicious cookies are the perfect fall snack! They are low in sugar & offer a great source of healthy fats, and fiber! Pour a cup of tea, grab a couple cookies & cozy up with your favourite book!
Makes approx. 24 Cookies
Ingredients
- 2 Tbsp ground flaxseed + 4 Tbsp Water 
- 1½ cups oat flour** (use Gluten Free Oat Flour if necessary) 
- 1 cup whole rolled oats (use Gluten Free Oats if necessary) 
- 1 tsp baking soda 
- 1 tsp cinnamon 
- 1/4 tsp ginger 
- pinch of nutmeg 
- ½ teaspoon sea salt 
- ½ cup almond butter (very creamy) 
- ¼ cup melted coconut oil 
- ¼ cup applesauce 
- 1 teaspoon vanilla extract 
- ½ cup coconut palm sugar 
- 1 cup finely chopped apple 
- ¼ cup chopped walnuts 
- ¼ cup chopped pecans 
- ¼ cup raisins 
Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper. 
- In a small bowl combine the flax seeds & water and set it aside to thicken. 
- To make your own oat flour: Using a coffee grinder, food processor or high speed blender, process the 2 cups rolled oats into a fine flour and measure out 1 ½ Cups. 
- In a large bowl, stir together the oat flour, baking soda cinnamon, ginger, nutmeg, and salt and whole rolled oats. 
- In a medium bowl, combine the almond butter, coconut oil, apple sauce, vanilla and coconut palm sugar. Add in the flax mixture and stir until well combined. 
- Add the wet ingredients to the bowl of dry ingredients. Stir in the diced apple, nuts & raisins. (batter will be sticky!) 
- Scoop spoonfuls of batter onto the baking sheet for each cookie. 
- Bake for 12 to 15 minutes, or until bottoms are lightly browned. 
- Once the cookies are completely cool, store them in an airtight container or freeze them. 
Tips:
- ** You can make your own oat flour by blending rolled oats in a coffee grinder. 2 cups of rolled outs should make 1 1/2 cups of oat flour. 
- Any seed butter or cashew butter would work well too! 
- Feel free to use whatever nuts & dried fruit you’d like 
- You can by oat flour from the store if preferred. 
- Make a double batch & freeze!
