Peach Arugula Flatbread
Vegetarian. Meat Option
A unique way to use fresh peaches. Combined with arugula & pesto this makes a delicious summer recipe!
Makes 4
Ingredients
- 4 small Store bought Artisan flatbread 
- 3- fresh Peaches, peeled & sliced 
- 1 cup cherry heirloom tomatoes, sliced 
- 4 large handfuls Arugula 
- homemade basil pesto – see recipe below 
- ½-1 cup feta cheese (I like using goats feta) 
- Salt & Pepper to taste 
- Fig balsamic reduction (I use the brand OLIV) 
Basil pesto
- 1/2 Cup walnuts 
- 1 cup fresh basil 
- 1/4 Cup pumpkin seeds 
- 2 tbsp lemon juice 
- Salt and pepper 
- 1/4 Cup avocado oil 
Directions
- Preheat oven to broiler. 
- Blend all pesto ingredients in a food processor 
- Cover flatbread with pesto. Add cherry tomatoes. Top with peaches, feta cheese & pepper 
- Place flatbread on parchment lined baking trays and broil in oven for about 3-5 mins. Be very careful not to burn. Remove from oven. Top with arugula and place back in oven for about 30sec. 
- To serve drizzle with Fig balsamic reduction. 
Tips
- For additional protein you could always add grilled chicken
