Peanut Butter Banana Protein Bars
Oil Free, Refined-Sugar Free, plus Vegan, Gluten Free & Nut free Options
If their title isn’t enough of a mouthful, these protein bars sure will be. Packed full of high-energy foods and healthy fats, these vegan bars make for a perfect post-exercise snack to replenish your tired muscles.
Makes 12 Bars
Ingredients
- 2 large ripe bananas 
- 2 cups rolled oat (quick oats will also work, use gluten free if needed) 
- ¼ cup hemp hearts 
- ¼ cup walnuts, chopped 
- ¼ cup unsweetened shredded coconut 
- 3 tbsp cacao or cocoa powder 
- 1 tbsp cinnamon 
- 2 heaping tbsp peanut butter (or almond butter) 
- 3 tbsp of honey or maple syrup (or more depending on your desired sweetness) 
- 1.5 tsp pure vanilla extract 
- 3 pinches of fine ground sea salt 
Instructions
- Preheat the oven to 350 degrees F. Line a 9 x 12 baking pan with parchment paper. 
- Place bananas in a medium bowl and mash them until smooth. 
- Add all remaining ingredients and stir together until well combined. 
- Bake in the oven for approximately 15-18mins. 
Nut free option: sub an extra 1/4 cup of hemp hearts in place of 1/4 cup of walnuts. Use tahini or sunflower seed butter instead of peanut butter.
